JOÃO PAULO FABI

Basic Profile Assistant Professor. Experience in Chemistry, Biochemistry and Molecular Biology on vegetable-derived foods, specifically on the understanding of molecular bases of fruit ripening and the relationship between the consumption of vegetables with possible benefits to human health. Academic background - Bachelor degree in Pharmacy-biochemistry from FCF/USP - Doctor degree in Food Sciences from FCF/USP - Doctor degree from University of Nottingham – England (2006) - Post-doc from University of Nottingham – England (2008) - Post-doc from the University of São Paulo (2011) Main research lines Development of research in the areas of Chemistry, Biochemistry, and Molecular Biology on vegetable-derived foods, directing the efforts to the understanding of molecular bases of fruit ripening, and to the relationship “consumption of vegetable-derived foods vs. possible benefits to human health”. The main research topics are: a) Analysis of the genic expression of fruits submitted to controlled ripening; b) The effect of fruit ripening in the modification of bioactive compounds; c) The anti-cancer potential of structural polysaccharides from fruits.
